Another favorite of mine, It just don't get any better than than this1
Directions:
1. Scale & clean fish, remove head or leave according to desire, I personally don't like him looking back at me! Leave belly flap in place. 2. Cut onion into 4-5 wedges 3. Spread open belly flap, lay fish in an upright position in large greased glass casserole dish 4. Cut slits across back in 6-8 equal locations, at least 1/2-3/4 inch deep 5. Alternaterly, lay a strip of bacon then onion wedges in slit 6. Seperate liquid from tomatos, cut tomatos into smaller pieces, return to liquid, pour over entire fish 7. Sprinkle with parsley, salt and pepper to taste. 8. Cook uncovered at 400 degrees for 30-40 minutes or until meat flakes easily with a fork
Ingredients: 3 Lb or more Rock or other fish (Whole)
I large onion 1 Large can whole tomatos 4-5 strips of bacon Salt/Peper Parsley
